Creamy Banana Crepes Drizzled with Strawberry and Chocolate Sauce





Crepe is one of my favorite dessert slash comfort food. I don't have a sweet tooth but when I do crave for something sweet, I go for crepes. I did not know how to make it so I researched and looked for a recipe online. I found one in Allrecipes.com. I tweaked the recipe a little though for my own preference. It is creamy and melt in the mouth goodness but not overly sweet. It is very easy to make and so it became one of our favorite desserts.  So here's my recipe, instead of using strawberries, I  used of bananas. You can use any fruit, strawberry, blueberries, bananas, or mangoes.

INGREDIENTS:

For making the crepe:
6 eggs
1 cup milk
1 cup water
6 tablespoons melted butter
1 1/2 cups all-purpose flour
1 teaspoon salt

For the filling:
1 8 oz package of Philadelphia cream cheese, softened
1 cup confectioner's sugar, sifted
1/2 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup heavy cream
Sliced bananas

For toppings:
Sliced bananas
Whipped cream
Chocolate syrup or sauce
Strawberry syrup or sauce

PROCEDURE:
Making the crepes:

Put all the ingredients for making the crepe in a blender. Blend the ingredients well until smooth.

In a non-stick pan, heat a little oil or if you have a cooking spray, spray the pan well. Once it's heated, pour about 2-3 tablespoons of crepe mixture (vary the amount according to how thin or thick you want your crepes) slowly into the pan. I usually pour it on the side while tipping the skillet a little and then swirl and even out the mixture.

When the edges turn a little golden brown, flip it over, and then wait for that side to turn golden brown also.

Repeat the steps until all of the crepe mixture is used up.
(Put the made crepes on a plate and cover it with a damp paper towel, to keep it from drying.

Making the filling:

In a big mixing bowl, put the softened cream cheese, the confectioner's sugar, the lemon juice and vanilla extract.

Using an electric hand mixer, mix the ingredients well. Add the heavy cream, blend and mix until the mixture is a little stiff.

MAKING THE BANANA CREPES:

Get one crepe. Put some cream cheese mixture on the middle (the amount depends on you).
Next, put the sliced bananas on top of the cream cheese mixture evenly.
Then roll the crepes like a log. Position the fold on the bottom on top of the plate.
Put some whipped cream on top of the crepe. Then decorate some slices of banana on top.
Finally, drizzle it with chocolate or strawberry sauce.
