Tortilla Soup

9 oz. Bear Creek Tortilla Soup Mix
1 package Corn Tortilla, cut into strips(separate 1 cup and fry the rest)
8 cups water
12.5 oz.  can Hormel chicken breast or any leftover chicken meat
Salt and pepper to taste
3 tbsps. cooking oil
cilantro (optional)

PROCEDURE:
Bring 8 cups of water to a boil.
Whisk in the soup mix.
Lower heat to medium ,add the drained chicken breast pieces, and then simmer for 15 minutes stirring occasionally.
Put the cup of tortilla strips in the soup. This will make the soup a little thicker.
Salt and pepper to taste.
Serve and garnish with fried corn tortillas and cilantro.

Frying the corn tortilla:
Heat oil or butter in a skillet.
Then put the rest or remaining corn tortilla strips.
Toss and stir until golden brown.
Use as garnish for the tortilla soup.

Breakfast Idea: Leftover Chicken Fajitas with Pita Bread

Do you want an easy breakfast idea? If you have some leftover meat, like leftover roasted chicken, pork, or beef, make it into fajitas for breakfast. Saute it with sweet onions and sweet bell peppers then season it, you will have a fast and easy breakfast! Lay it in between folds of warm tortilla or in my case I used toasted pita bread.




My version is with a Filipino twist. Instead of using fajita seasoning, I just used soy sauce and a little vinegar, and of course salt and pepper! Salty with a little acidity. We love to drizzle it with a guacamole mild spicy sauce. Yum! Breakfast is ready.

My Homebaked Ensaymada

I have been craving Filipino bread in a while. I've been missing that sweet, smooth, and tasty kind of bread we have in the Philippines. So I looked around online to search for a recipe for "Ensaymada".

Ensaymada is one of the popular breads in the Philippines preferred by most Filipinos besides pan de sal because of its sweet and cheesy flavor. It is a sweet bread filled with sweet butter and brushed with buttered sugar and sprinkled with grated cheese.

I haven't tried baking any kind of bread before, so this is sort of an experimental baking for me, since it will be my first time. I was expecting for the worse while baking because anything can turn out wrong since I don't have any experience in baking. But I still took all the courage I have just so I can taste a bread from home and hoped for the best.

After doing all the mixing,kneading,waiting, and baking, I have now the fruit of my labor or rather "bread" of my labor,lol! And to my surprise it came out pretty good for a first timer,lol!It cane out soft and tasty.It may not be as good as Goldilocks ensaymada but it wasn't that bad either. My husband and lids like it so I guess it is consummable,lol. Anyway, I am satisfied with my first homebaked bread. I know I still have a lot of learning to do in baking, in which I am now excited to study on it and experiment more, so I can perfect it.

HAM AND CHEESE OMELETTE

Are you in a hurry to fix a breakfast but still need to fix something for your hubby and kids? Then here is a very easy and fast breakfast recipe: ham and cheese omelette. This is a dish of fried beaten eggs filled with ham and cheese. If you know how to cook or fry eggs then this will be very easy for you. You can vary the fillings according to your preference. I usually make omelettes from left over meat, bacon, some veggies like spinach, mushroom. You can put any filling you like. This recipe will be using ham and cheese.

CASSAVA CAKE RECIPE


Way back in my high school days, I used to buy Cassava Pudding for recess at the Night Class canteen in NOHS. It is one of my favorites. Living here in the US made me miss eating my favorite foods at home. So I have to find ways to be able to make it. So I tried to experiment and later came up with a recipe that tickles my taste buds, I mean that I like. Cassava Cake is mainly made of grated cassava, milk, sugar, and coconut milk. So here it is:





Ingredients:
2 LBS. grated cassava
1 can coconut milk (minus 6 tbsp. for the topping)
1 cup white sugar
3 eggs
1/4 cup butter
1 can evaporated milk
1 can condensed milk (minus 6 tbsp for the topping)
1 tsp vanilla

FOR TOPPING:

6 tbsp coconut milk
6 tbsp condensed milk
2 egg yolks

PROCEDURE:
1. Pre-heat oven to 375 degrees.
2. Mix all the ingredients (except the topping ingredients) in a bowl.
3. After it is mixed well,put it in a greased baking pan.
4. Bake it in the oven for about 35-45 minutes or until the mixtures dries.
5. On the other hand, mix all the topping ingredients,well. After the cassava is done in the oven, pour the topping and bake it for another 25 minutes or until the topping turns golden brown.
6. Take it out from the oven,let it cool down a little and ready to serve. Eat, eat, eat!!!:)

 For those who are in the US and do not have fresh coconut milk, you can buy coconut milk in cans.
