HOMEMADE BURRITO RECIPE

Burrito is a Mexican dish which has a filling of either meat, veggies, rice, etc and wrapped in a flour tortilla. You can actually just make different kinds of filling according to your preference. Here, I am using hash browns or shredded frozen potatoes, some bacon, scrambled eggs, and chopped roasted green chile. I usually make these in big batches and just wrap it in clear plastic wrap and then freeze it. When you need to eat it, then just pop it in the microwave for a minute or so and then you have a warm burrito! This taste better too, if you drizzle it with Green Enchilada Sauce.



Ingredients:

8 tortilla wrappers
1 lb hash browns
2 packs of bacon
10 pcs of eggs
1 13 onz roasted chopped green chile(mild)
Grated Mexican Three Cheese
Salt
Pepper
1 medium size onion,chopped
Cooking oil
Cilantro

SAUCE:
Green Enchilada Sauce


PROCEDURE:
Cook the hash browns, bacon, and eggs separately.

HASH BROWNS:

Heat 3 tablespoons of oil in a pan.
Add onions and saute it for about 2 minutes.
Then add the hash browns. Mix it well. Keep stirring until hash browns are cooked.
Season with salt and pepper.
Set aside.

BACON:

Slice the bacon into bite size pieces.
Then fry it in a heated frying pan until golden brown.
Drain over paper towels and set aside.

EGGS:

Beat the eggs well. Season with salt and pepper.
Heat oil in a pan. Put the eggs. Stir eggs to scramble it.
Add the chopped cilantro. Mix it well until egg is cooked well. ( You want the eggs to be a little firm)

WRAPPING THE BURRITO:

Heat up the tortilla wrapper in the microwave. Put a wet paper towl to cover the tortilla on a plate and then microwave it for about 20-30 seconds.

Put the fillings and layer it: the hash browns,bacon, eggs, green chile and then sprinkle it with grated cheese. (Put about 1 tablespoon or so of each, not so much that you can't roll your burrito anymore)

Roll your burrito. Serve with enchilada sauce drizzled on top of it. Enjoy!
