CHICKEN CURRY

Philippines has some Indian cuisine influence, this is visible in some of the Filipino dishes which include a curry seasoning. Curry is sometimes used in dishes with chicken, beef, pork and vegetables cooked like a stew. Here is a chicken recipe with curry seasoning and added with coconut milk to make it creamy.

 INGREDIENTS:

whole chicken, cut-up into pieces
medium onion, chopped
3 cloves garlic, minced
ginger
red or green bell pepper, sliced
potatoes, cut into cubes
coconut milk, divided into half
2-3 tbsp. curry powder
cooking oil
1 can chicken broth
water
salt and pepper, to taste

PROCEDURE:

  • Heat oil in a big cooking pot. Then put the onion and then the garlic and saute it until the onion becomes transparent. Add the ginger.
  • Put the chicken pieces and let it brown. 
  • Then put some curry powder. Add the right amount according to your preference. If you want it spicier then you can add more curry. Just add it little by little so you can tell how much you want. Mix it well with the chicken.
  • Then get one-half of the coconut milk and the chicken broth and pour it over the chicken. Stir it. If the liquid doesn't cover the chicken, add a little water, just enough to cover the chicken. 
  • Put the stove to medium-low heat and slow cook it for about an hour.
  • Put it on medium heat. Add the potatoes. Simmer for about 10 minutes.
  • Add the carrots and bell pepper. 
  • And lastly add the other half of the coconut milk. Season with salt.
  • Simmer and let it boil and then turn it off when the carrot and potatoes gets a little soft.
